Baked Apples with Oatmeal Strudel Topping

I don't know about you, but I like to have something warm and cold served together for dessert. Since I had just made my Dairy-Free Apple Cinnamon Ice Cream a couple days before, I decided I needed something more to make it complete.

And so this warm, apple, cinnamon, oatmeal deliciousness was born! And to be honest, it ended up being better than the ice cream!!

But as a pair...they are a perfect match.

Ingredients:

Apple Portion:

  • 6-8 small granny smith apples
  • Half a lemon (juice only)
  • 1 TBSP cinnamon
  • 1/2 cup coconut sugar
  • 2 TBSP coconut oil (melted)
  • Pinch of salt
Oatmeal Strudel Topping:
  • 1 cup whole grain rolled oats (quick cooking oats will also work)
  • 1 tsp cinnamon
  • 1/2 cup coconut sugar
  • Pinch of salt
  • 2-3 TBSP coconut oil (firm, not melted)

Directions:
Preheat oven to 350 degrees Fahrenheit. Peel, core, and cut apples into strips and place in an 8x8 inch baking pan (or larger if you use 8 or more apples). Pour juice of half a lemon over apples and mix together. Add remaining ingredients for apple portion and mix well so that all the apples are coated.

For the topping, in a separate bowl mix together oats, cinnamon, coconut sugar, and salt until well combined. Chop in coconut oil 1 TBSP at a time until you achieve a lumpy texture throughout the bowl. Pour topping over apple mixture and distribute evenly. Bake at 350 degrees for about 35-45 minutes, or until apples are tender.



And there you have it! Serve warm with a dollop of whipped topping, ice cream, or just enjoy alone with all of its apple goodness.
